HUGO PALMER

4g Hugo Gao Wen black tea

.25oz Lemon juice

.75oz Hugo Masala Chai Concentrate

.50oz simple syrup

Garnish: thyme sprig, lemon slices

  • Steep Gao Wen tea with 110g (about 4oz) of hot water for 3 minutes.
  • Pour finished tea over 90g ice (3-4 cubes, ice should melt slightly).
  • Add lemon juice, chai concentrate and simple syrup; mix vigorously.
  • Fill a 16oz glass with ice, layering slices of lemon, and pour over tea mix.
  • Garnish with bruised thyme sprig (slap it!) and sliced lemon.

MASALA HORCHATA

.75oz Hugo Masala Chai Concentrate

.5oz sweetened condensed milk

8oz rice milk

Garnish: ground cinnamon and whole cinnamon bark

FOR THE RICE MILK

1/3cup long grain white rice

  • Make the rice milk. Combine rice with 1 cup filtered water and let soak overnight. Blend to creamy consistency (1-2 minutes) and strain through cheese cloth or mesh sieve.
  • Add sweetened condensed milk, chai concentrate, and rice milk to mixing glass.
  • Stir vigorously with a bar spoon until fully combined.
  • Fill a 12oz glass with ice; pour mixture over.
  • Dust with cinnamon and garnish with whole cinnamon bark.

MATCHA AFFOGATO

2.5g any Hugo Matcha

2 scoops vanilla bean ice cream

  • Whisk matcha with 50ml 170F water.
  • Scoop 2 generous scoops of ice cream into a chilled Cortado glass (or other small glass holding 4-6 ounces).
  • Pour matcha over ice cream; serve with small spoon.
